Giou is made using only honey and slowly fermented at low temperatures.
We named this mead, which is our origin, "Gio" after the name of the brewery where it also originated. At first it tastes like Japanese sake, but in the aftertaste you can feel the astringency characteristic of bittersweet honey. Through a long aging schedule at low temperatures, we have achieved a smooth taste that does not give you the impression of a high alcohol content.
It has a refreshing aroma that is slightly reminiscent of citrus, and the mouth is very round, yet we were able to achieve a sharpness that would satisfy people. I think it has a flavor that is easy to recommend to people who regularly drink sake and shochu.

Giou
"Giou", fermented slowly at low temperature, is actually the first mead we brewed at ANTELOPE.
We named this mead, which is our origin, "Giou," after the name of the place where the brewery is located. At first, the taste is like sake, but the aftertaste has a bittersweet, honey-like astringency. "Is honey bitter?" Some people may think so, but the bitterness is sometimes masked behind the sweetness and hidden in the back.
Through a long aging at schedule low temperatures, we have tried to express a smooth mouthfeel that does not give the impression of high alcohol content.
With a refreshing honey and issuer-derived aroma that is slightly reminiscent of citrus, we also expressed a very rounded, yet drinkable sharpness. The taste is easy to recommend for people who regularly drink sake and shochu.
