Every year, I’ve revamped the Shiomead made with Mr. Shiomi’s honey. "Aurea" is a word that means golden. This golden-colored mead, cloaked in the intrigue of Japanese honey, has a flavor that only the Japanese climate—and Mr. Shiomi, who was raised in Japan—could create.

Aurea 31, which pairs with Aurea 13, was crafted at the same time. This one will be released a little later.

The number 403, which represents Mr. Shiomi.

The beauty of mead lies in the ability to create two completely different styles from a single honey; it is a work that cannot be completed without the power of the raw ingredients.

It has become a mead that is easy to enjoy in any situation and one you’ll want to keep on hand.

〈Tasting Note〉
A golden color with a subtle greenish tint. White foam rises, and scents of muscat, mint, and a hint of lemon emerge. A fragrance that is full of the characteristics of Mr. Shiomi’s honey. Expansive acidity, with a touch of alcoholic bitterness on the finish. It’s hard to believe it only has 6% alcohol.

〈Mead making〉
Honey is mixed with water and yeast is added to ferment. The temperature is lowered for aging, followed by racking and pasteurization. Finally, it is bottled.
