It was early summer at the brewery when ripe mangoes arrived from Star Fruit in Miyazaki. We brewed this batch together with fans who gathered to help us create a barrel-aged mead.

Over the following six months, it aged in red wine barrels. While the flavor was quite sharp at the start, it evolved over time into a profile with soft acidity and a smooth mouthfeel.

Thanks to the lactic acid fermentation, it has a character reminiscent of a mango lassi, so you might enjoy it mixed with milk. Of course, it is also delicious served hot.
