When I started making mead at ANTELOPE, I really wanted to incorporate some nuances of craft beer, so I brewed this: The Last Supper. I adopted techniques used for sour ales.

I thought it would be interesting and a breath of fresh air to have a mead that makes you go "sour!"—and it’s already been over two years since I made it.

True to its name, The Last Supper (a pun on the Japanese word "suppa," meaning sour) is a distinctly tart mead. Amidst the sourness, you can still feel the gentle sweetness of the honey.

The color is a slightly cloudy yellow. The aroma is sharply acidic from the first whiff, reminiscent of passion fruit, with notes of honey rising up afterward. On the palate, it offers a crisp acidity and bitterness, followed by the sweetness of the honey. I highly recommend this to those who enjoy white wine or sour beer.
