Shiomead '23 -Red Wine Barrel-
This is the second collaboration mead with Yo-ho-ya in Hamamatsu City. Once again, we brewed this using honey sourced entirely from Yo-ho-ya.
We crafted this mead using honey that features a cool, refreshing character reminiscent of Muscat, mandarin orange, Japanese pepper, and mint, then aged it in red wine barrels. The fruitiness and tannins derived from the barrels blend with the mead, creating an atmosphere akin to a light Madeira.
With its aged character and well-integrated, full body, this is a truly cohesive bottle. We recommend pairing it with chocolate desserts or red meat.
