The first mead from ANTELOPE brewed exclusively with 100% domestic Japanese honey.

We used Soyogo honey harvested by "Yohoya" in Hamamatsu, Shizuoka Prefecture. Attracted by the pure sincerity and dedication to craft shown by Yohoya’s owners, Mr. and Mrs. Shiomi, we decided to take on the challenge of creating a domestic honey mead together. We used an abundance of this honey, which is refreshing, rich in white fruit flavors, and carries a hint of spice.

Mead is characterized by its long fermentation process, and modern techniques have made it possible to control that speed relatively freely. However, this time, we decided to let the fermentation proceed naturally, hoping that the unique character of the honey raised by Mr. Shiomi would shine through. The final product was aged in white wine barrels.

This is a bottle that combines the body and fermentation-derived aromas typical of mead, while retaining the fruity flavor and refreshing coolness of the honey. We recommend enjoying it on its own before or after a meal, rather than pairing it with food.
