Koko Hole 1-1 / Barrel-Aged Mead with Plum and Japanese Pepper
A barrel-aged mead crafted with plums and Japanese sansho pepper harvested in Wakasa, located about a two-hour drive from our facility.
The plums and sansho were aged in a barrel along with the mead for eight months. The plums, initially gentle in character, developed a vibrant and robust acidity through the long maceration. This plum acidity is complemented by notes of oak and a subtle hint of sansho pepper.
Bursting with the fragrance of white flowers, this is a very spring-like creation. Since it is dry, it pairs wonderfully with meals or serves as an excellent toast. We have packaged it in a small bottle so you can easily enjoy it in one hand as the season for outdoor activities begins.
