We challenged ourselves to see how complex a flavor we could express using just honey without using any secondary ingredients. Over time, the peaks will fall off, creating a golden liquid with a high alcohol content of 14%, moist sweetness, and a slight acidity. With a sherry-like finish and a rich, buttery aroma, it's sure to put a smile on your cheeks.

We offer two types of the same unblended sake: one aged in bourbon barrels and one aged in bottles. I think it's great fun to compare drinks and get a feel for the differences in aging methods.

The finish is similar to sherry, with a rich buttery aroma and a fine honey-derived sweetness that may make you smile.
