There is a building in Kyoto that stocks more of our mead than anywhere else.
On the top floor of that building is an ice cream bar called UFO.
Like a solitary cloud floating in the night, its light draws in many people—some come to drink coffee with their ice cream, others wine, and some, mead.
This is the first mead collaboration with that very UFO.
〈UFO→MEAD〉
If we’re going to go through the trouble of making it, we thought it should be a mead with a slightly milky, sweet-and-sour profile that pairs perfectly with their signature ice cream.
In our very first meeting, the team at UFO already had such challenging and exciting suggestions. I was thrilled at the prospect that we might actually be able to create something no one had ever seen before.
For this release, we used peaches from Abe Farm in Niigata Prefecture,
along with condensed milk.
To capture that yogurt-ice cream vibe while maintaining a strong milky presence, we knew we had to use condensed milk rather than lactose. The finished product is a condensed milk-flavored mead.
〈Tasting Note〉
The upper layer is a clear, translucent yellow. However, when the lees are mixed in, it transforms into a milky white. The aroma is packed with the scent of milky candies. The smoothness of the peach comes through on the palate, finishing with a sharp acidity. It pairs beautifully with sweet ice cream or even a cookie.
