Shiga is home to many producers we are proud of.
From bread and music to agriculture and processed goods. We send our respect to every producer, celebrate life together, and enjoy listening to music by the lakeside.
"Music for Sheltering from the Rain" is one such proud event.

This year's theme is Kaguya—bamboo.
We created this mead using bamboo to harmonize with that theme. We sourced the bamboo charcoal and custom-roasted coffee from Shiga as well to take on this challenge.

 

About the Production

Why these ingredients?

  • The coffee features beans specially roasted by Dongree Coffee. Its red-wine-like depth pairs perfectly with the aroma of the honey. It also has a subtle acidity.

  • The bamboo charcoal has a light roasted aroma and a delicate profile. However, it excels as a filtering agent, resulting in a clear and smooth mouthfeel.

Method

  • We fermented honey mixed with a small amount of plum, and steeped the ground coffee beans during the mid-fermentation stage. Afterward, we added the bamboo charcoal and stirred, then performed a transfer.

  • After pasteurization, we carbonated it.

Tasting & Pairing

Tasting Note

  • Color and aroma reminiscent of coffee, with a subtle hint of roasted bamboo from deep within.

  • The flavor is on the sweeter side, with a pleasant, light acidity derived from the plums. With a low alcohol content of 7%, it’s perfect to enjoy with dessert or even with breakfast.
  • Give it a gentle shake to make the color even darker. The sediment is jet black, but it is perfectly fine to consume.

Recommended Pairings

  • Hamburg steak with ketchup sauce.

  • American-style pancakes topped with plenty of whipped cream.

  • A large serving of Lady Borden ice cream.

Background

The invitation to "Music for Sheltering from the Rain" came from Mr. Hoshikawa of Dryriver, who has been baking French-style bread in Shiga Prefecture for a long time. He is always full of curiosity about fermentation, positive, bright, and above all, he loves and supports ANTELOPE. We love him just as much. There was no reason to refuse, so we made this mead for the event.
