I feel that preferences for scents vary from person to person.
There is a mead with a scent I absolutely love, and that is this "What Churchill Said." It’s a long, mouthful of a name, so we all just call it "Churchill" for short.
Made with lime and juniper berries, this bottle was inspired by a Gin and Tonic. While the recipe is quite orthodox, it involved a lot of trial and error, and this is an introduction to a mead crafted with so much love.

I really love classic cocktails. When I think of classics in the cocktail world, the Gin and Tonic always comes to mind. It holds memories from many different places, and this mead is inspired by that drink.
The sound of the cap popping off and the scent of gin and lime that rises when poured into a glass are truly exciting. It’s a slightly sweet, vibrant, and very positive drink.
The Gin and Tonic was a cocktail beloved by Winston Churchill as well.
This mead was created in tribute to a drink that could be called the soul of England. With an ABV of 8%, it is on the lower side for the mead world, but I believe its flavor profile is one that will be loved by everyone. 〈Tasting Note〉
Clear, pale yellow. Strong carbonation with a pleasant green bouquet. The scent that travels through the nose is a bit different—complex and bitter. It has a sweet touch, but the finish features the astringency of lime peel, which provides a nice crispness. This is a quintessential ANTELOPE classic.

〈Mead making〉
The limes were processed using a technique I learned directly from a French chef: passing the lime peels through water just before it boils, three times. This apparently suppresses the astringency and lets only the unpleasant scents evaporate.
We add that during the late stages of fermentation, along with juice squeezed at the same time.
The juniper berries are soaked in honey for 40 minutes before fermentation, and then added again during the late stages. Because the flavor composition is simple, I imagine that layering it bit by bit in various ways is the essence of a classic, so I’ve been experimenting with that.
