＜Product Description＞

It didn’t take long for the term "Craft Sake" to permeate the alcohol industry. We’ve embarked on a new challenge with haccoba, who continues to lead the vanguard. With the goal of blurring the boundaries of alcohol, haccoba and we have each created different beverages using the same raw ingredients.

In mead making, there is a style (production method) called "braggot," which uses malt alongside honey. For this collaboration, we used rice koji instead of malt, aiming to create our respective versions of a "Japanese Braggot."

Since braggot traditionally carries a strong nuance of "beer plus mead," we were filled with excitement and surprise at the concept of a "rice and honey Japanese braggot." Made with rice and rice koji instead of barley, and wasabi instead of hops, this is "Pink (Awai)." Enjoy wondering, "What is this? Is it sake?"

The name is Pink (Awai). I actually thought about calling it Gray. Gray represents that ambiguous space between black and white, which is the theme of this drink. But then I realized there is also a color where the boundary between red and white is ambiguous. "Pink!" I thought, and decided instantly.

(Awai) comes from Shiga. We have no sea, so our sake is born from the "freshwater sea" (Lake Biwa). haccoba represents Pink (Western). We have each expressed our own vision of Pink, salmon, and sake.

Please enjoy this fusion of rice and honey.
